Lemon Vinaigrette Salad Dressing
This lemon cilantro vinaigrette recipe is super easy, and can be changed into whatever you're going for by adding in some of your favorite flavors! I've added the dressing to a refreshing cucumber salad here, which is one of my fave sides to add on to a heavy dinner, or even just a light lunch with just this salad, some rice, and a bit of chicken. Try it out!
1 tsp vinegar
Pinch of black pepper
½-1 tsp honey (depending on how sweet you like yours)
1 tbsp finely minced cilantro (optional)
Juice of ½ lemon (about 1 tbsp)
Salt to taste
Add ons for variations:
1 tsp finely minced garlic/onion/green chili
For the salad I used:
1 roasted corn
½ medium white onion
All diced into the same size. You can use whatever salad veggies you like!
Whisk together in a small bowl, the vinegar, black pepper, honey, and salt.
The slowly stream in the olive oil, whisking continuously to emulsify the liquids together, to create the salad dressing.
Add in the cilantro and then the lemon juice slowly, mixing well.
Cut up your salad veggies and set aside.
Mix in the vinaigrette right before serving.
